THALI- CHEFS TABLE

Year 2 Project 2 Sem 1

LASALLE College of the Arts

Singapore

2020

This project is about understanding the ethos and style of a particular chef and designing a piece of tableware that aligns with their philosophies.

My chef of choice was Gaggan Anand, someone who hails from the same part of the world as me- Kolkata, India. I studied his progressive Indian style of cooking as well as his inspirations and beliefs to ideate a plate-

A contoured stainless steel design that helps diners to pick up food with their hands (the traditional Indian way of eating) as well as combine flavours with a bite sized dish. Chef Gaggan encourages combining flavours and creating an experience for diners to feel their food (thus the eating with hands) subsequently feeling the heat from the food therefore I feel stainless steel would be the perfect for that purpose. Moreover the stainless steel is an ode to the plates from the street food shacks back home.
